Fresh, crunchy and full of herbs, this simple cabbage and cucumber salad gets a bright, savoury-sweet vinaigrette and a generous topping of fresh Eatmore Pea Shoots.
Vinaigrette
- Juice of 2 lemons (about ¼ cup)
- ½ cup olive oil
- 1 clove garlic, minced
- 1 tbsp za’atar
- 1 tbsp pomegranate molasses
- Salt and pepper, to taste
Mix all vinaigrette ingredients in a small bowl. Season to taste and set aside.
Salad
- 3 mini cucumbers, cubed
- 3 green onions, finely sliced
- ¼ cup fresh dill, finely chopped
- 2 tbsp fresh mint, finely chopped
- 6–8 cups shredded green cabbage
- Eatmore Pea Shoots and/or Microgreens, for topping
- 1 Tablespoon Maple Syrup or Pomegranate Molasses
Preparation
- Place the cucumbers, green onions, dill, mint and cabbage in a large bowl and toss gently.
- Add the vinaigrette and toss until everything is evenly coated. Taste and adjust the seasoning as needed.
- Top generously with fresh Eatmore Pea Shoots and/or Microgreens and serve.
