Sweet roasted peppers marinated with garlic, olive oil and vinegar make an easy, flavour-packed addition to sandwiches. Layer them with your favourite Eatmore Sprouts, avocado and fresh tomato on good sourdough.
Ingredients
- 6 coloured peppers- roasted and skin removed
- 4-6 garlic cloves- minced
- 1 1/2 tsp Salt
- 1/2 tsp Pepper
- 1/4 cup Apple Cider Vinegar or vinegar of your choice
- 1/2 cup Olive oil
Preparation
- Heat oven to 425F .
- Cut Peppers in half, remove seeds and stem . Place cut side down on a parchment paper lined baking sheet.
- Roast in the hot oven until most of the skin is blackened.
- Remove tray from the oven and let peppers cool down for 15 minutes.
- Make marinade by placing minced garlic, salt, pepper , vinegar snd olive oil into a mason jar with a lid .
- Shake until salt is de solved, set aside.
- Remove skin from the peppers, use a pairing knife , if needed .
- Cut the papers into strips and layer into a bowl .
- Add the marinade to the peppers.
- Mix gently.
- Place a lid on the bowl and place it into the fridge for at least 12 hours.
- Remove from the fridge 30 minutes before using the peppers.
Serving Suggestion: Use the peppers as part of your sandwich, layer the peppers between your favourite Eatmore Sprouts, Tomatoes, Avocado or cucumbers on delicious Sourdough bread. Enjoy!
