Fudgy chocolate brownies made with Eatmore Mixed Beans, chocolate chips, and hazelnuts, dusted with icing sugar.

Mixed Bean Brownies

Ingredients

  • 1 cup Eatmore Mixed Beans
  • ½ cup Buttermilk
  • ½ cup soft Butter
  • ¾ cup Cocoa Powder
  • 2 Eggs room temperature
  • ¾ cup Maple Syrup
  • 1 tsp Vanilla Extract
  • 2 tsp Cinnamon powder
  • ½ tsp Sea Salt
  • ¾ cup All Purpose Flour
  • 1 tsp Baking Powder
  • ½ cup Chocolate chips plus some for the topping
  • ½ cup Hazelnuts plus some for the topping (optional)

Preparation

  1. Heat oven to 325° F
  2. Line a square 8×8 baking tin with parchment paper
  3. Steam Mixed Beans for 20-25 minutes
  4. Drain beans and cool to room temperature.
  5. Place beans in a blender, add buttermilk and blend until smooth. Set aside.
  6. Cream butter, cocoa powder, vanilla, cinnamon, and sea salt until creamy.
  7. Add eggs and mix until combined
  8. Mix all purpose flour and baking power then add to the batter
  9. Add one cup of the smooth Mixed Bean mixture
  10. Add chocolate chips and chopped hazelnuts and stir gently until combined
  11. Pour the brownie mixture into the prepared baking tin, sprinkle extra chocolate chips and hazelnuts on top.
  12. Bake for 20-25 minutes at 325° F – Do not over bake.
  13. Cool brownies on a cooling rack
  14. Remove rom tin and cut into desired size and shape. Dust with icing sugar if desired.
